Recipe #12 Lawar (Balinese Salad)


LAWAR 
(Balinese Style Salad)

Bahan :

Kacang panjang 
Kol 
Nangka sayur
Kelapa muda parut (kelapa untuk urap)
Jeruk limau

Bumbu halus :

3 bawang putih
6 bawang merah
1 sdm ketumbar
3 butir kemiri
1 sdm biji lada putih
1/2 sdt terasi
2 cm jahe
4 - 5  cm kencur
1/2 cabai merah (buang biji)
cabai rawit (sesuai selera)
2-3 cabe jawa/cabe puyeng (opsi)*

*bahan ini mungkin jarang sekali ditemukan di pasar. Apabila ingin mencoba dapat membeli secara onine




Cara membuat :

1. bakar terasi, kemiri, dan lada butir

2. rebus kacang panjang lalu potong kecil, rebus kol lalu diiris tipis, rebus nagka sayur lalu di cincang kasar.

3. Gongseng kelapa (tanpa minyak) hingga kering dan sedikit kecoklatan.

4. Haluskan SEMUA bumbu halus. Tumis bumbu halus hingga wanggi dan matang. Bumbui dengan garam dan gula sesuai selera

5. untuk penyajian, campur kacang panjang, kol, nangka sayur, dan kelapa sesuai selera. Tambahkan bumbu halus yang sudah di tumis sesuai selera. Berikan perasa jeruk limau dan bumbui dengan garam.
